It's difficult to find just one answer to the question, “What is Canadian cuisine?” Many times, it’s based on regional favourites. But when Oliver & Bonacini’s Bannock restaurant opened in 2011, chef Michael Bonacini and corporate executive chef Anthony Walsh came up with a compelling mix of Canadian comfort food.
“We try to do what’s in season and what’s fresh. What’s uniquely Canadian, whether it’s from the West Coast or East Coast and everywhere in between,” says Leanne Natale, general manager. “So we take those classic Canadian dishes and put our own spin on it. We make it really fun. We make it indulgent and make it taste really good.”
The name Bannock comes from the iconic flatbread brought to North America by Scottish explorers and adopted by Indigenous people. “Our version of bannock is in vein with the Scottish version,” Leanne explains. “We push the Canadian comfort food aspect of it. Our guests can grasp that. They understand chicken pot pie, they understand tortière and poutine. All of those things are very familiar and very comforting.”
EARL GREY
The most famous blended black tea. Infused with oil of bergamot; citrus fruit and layered with cornflower blossoms. Smooth flavours with a delightful balance of citrus notes.
ORANGE PEKOE BUKHIAL T.G.F.O.P
A single estate black tea from India growing by the Brahmaputra River. Thick and malty; but surprisingly airy with good flavour; a rich red hue and lots of golden tips.
ENGLISH BREAKFAST
A very full-bodied cup of tea. The strength and malty flavour of Assam is combined with the brightness and lively flavour of Chinese black teas.
ROOIBOS CHAI
From the South African red bush tree; Tooibos is naturally caffeine-free. This tea is blended with cardamom; cinnamon; cloves and nutmeg-traditional chai spices with the natural sweetness of Rooibos.
SENCHA
A wonderful Japanese green tea from the Shizuoka region; tending light liquoring; smooth and vegetative.
BAKED APPLE
A comforting flavoured black tea with apple pieces; rose blossom and almond slivers. This tea is smooth and delicious-perfect for a cold day in front of the fire.
PEPPERMINT
A refreshing mint infusion-perfect finish to any meal.
HERBAL RELAXER
A classic herbal-a beautiful infusion of chamomile; mint; sage; blackberry leaves and cornflower blossoms.
CITRUS SUNBURST
A delightfully fruity vitamin bomb. Loaded with herbs and citrus fruit; including hibiscus; lemongrass; lemon pieces; vitamin C and calcium carbonate. Calcium carbonate is often used as an antacid; making this blend great for digestion. Great iced as well!
